Fred Sirieix welcomes another two food companies to Manchester, where the owners pitch their businesses to high-street investors in the hope of opening their own restaurants. Up this week are Hollings, which specialises in British chophouse classics, and the Cheese Wheel, an Italian-inspired brand serving fresh pasta direct from a cheese wheel.
